Carolyn's Squash

Hi All: Bruce sent this my way to post on the blog. Now Carolyn, we just need the recipe. It looks very delicious and great for the fall!


  1. Squash looks great! I want the recipe! I'll be making chili this weekend with all the garnishes. Yum! We need to get Carolyn and your mom on here!

  2. Yes, I agree. When I go home over Christmas, I'll show her how to use the blog, and also nudge Carolyn... Hope to post something this weekend on it, myself.

  3. I understand that Carolyn made a spinach florentine filling. The squash (butternut or acorn) is cut in half and baked in about an inch of water, flesh side down. Then it is filled with the spinach and back in the oven to heat through. Sprinkle with parmesan.
